I love veggies of all sorts anyway, but this dip is delicious! If you try it, let me know what you think please.
Spinach & Artichoke Dip
Ingredients
1/3 cup Flour
1 lb Spinach – Stemmed and washed
¼ cup Unsalted Butter
½ cup finely chopped onion
1 tsp minced garlic
1 cup chicken broth
1 cup heavy cream
¾ cup milk
½ cup shredded part-skim mozzarella
½ cup grated parmesan
½ cup sour cream
1 tsp Tabasco (hot pepper sauce)
½ tsp salt
¼ tsp pepper
1 pkg 8-9 oz frozen artichoke hearts (thawed and chopped)
Process
1. In Dutch Oven (big pan with lid), cook wet spinach, covered 3 minutes, tossing once, until wilted. Drain – let cool – then chop
2. In saucepan, melt butter. Add onion – saute’ until softned (2 mins). Add garlic – cook 30 seconds.
3. In bowl, mix flour, and broth. Add this to saucepan, then add cream and milk. Let simmer 5 minutes to thicken.
4. Stir in mozzarella, parmesan, sour cream, hot sauce, salt, pepper – cook, stirring until cheese melts. Do not boil.
5. Add spinach, artichokes – simmer 5 minutes – stir occasionally.
6. Pour into serving bowl. Serve with tortilla chips.
