Maczippy, or anyone that can help! I've tried to get hold of suet with no luck. When hubby asked for suet at the meat dept today, they basically gave him just lumps of fat offcuts. Obviously I can't buy the packets here, but the fresh lump to grate would even do (unlike what they gave to him today, which is something I would trim off stewmeat and toss basically!) What is a substitute for it? Thanks smile

In general, suet is used over here (more so than back home) for feeding birds.
Good quality suet is made from the hard fat that is found around the kidneys and loin of the cow, it is the bovine version of pigs fat (lard/manteca). You can use other hard fats fromt he cow, but if you can get the fat from those areas it will be better.
Chill the pieces of fat in the freezer for about 20 minutes or so, then chop the fat finely but *don't* use a blender or food processor, as the heat (friction) will cause it to break down.
Shortening (such as Crisco), beef drippings, chicken fat, pork fat or butter can be used in it's place.

As it happens I love to cook dumplings and both the Bisquick or shredding the fat doesn't cut it for me.
My solution is to bring back Atora suet on each trip back to the UK. Email me and I'll be pleased to send you a packet.... grin
here in canada suet is called CRISCO but it isnt the same...I remember grandmother would spread good beef suet on piece of toast,it was yummy.....ever done that? or had sugar on bread and butter,,or bananas on bread,,ohh errrrrrr

The best sandwiches has to be salt and vinegar crisp sandwiches, though. I will still do them now, even though I can't get hold of walkers. Yum! razz
