More of a "what-if"
Does anyone have any pressure cooker recipes to share?
I have a few and love using my Kohn pressure cooker (do you remeber those old Prestige Hi-Dome PC's? They scared the hell out of me), but I was wondering if anyone else out there either brought their PC with them, and some good old English recipes, or has found some good recipes here.
I have a number of books on the subject but was wondering if anyone has some "personal" recipes to share...
Andrew
Well, from personal experience....
Take 1 mop and bucket,
1 scraper, (for the walls and ceiling)
1 frozen tv dinner to replace the gourmet meal decorating the kitchen,
1 swear box, (this will cover the the cost of new paint)
1 bottle of aspirin to quell the pounding heart......
Sorry, couldn't resist that!
I've never tried to use a pressure cooker since that disaster, though I hear they have foolproof ones on the market now. (I saw a good one on QVC)
I have not used a pressure cooker in years, but do remember doing this one with my mums cooker.
3#Beef brisket
3#Chopped onion,celery,leeks,carrots
1Tblspoon horseradish
1Tblespoon dry English mustard
3Tbl sherry
3Tblspoon Worcester sauce
Salt/ground pepper totaste.
I dont remember the cooking time(we would put this on and then go to the pub for a couple of hours)then come back and drop some dumplings in the pot if the meat was cooked.
So I geuss it takes around two hours.

Along the same line as Mel, Pease pudding is the worst thing to clean off a textured ceiling. Never used a pressure cooker since. eek

I had a similar experience with rhubarb. I took the stopper off too soon, before it had released all the pressure, it makes a lovely pattern on the ceiling though. This was a Prestige High Dome. I was still living in England then. I don't use Pressure Cookers anymore, I like to use the Crockpot now for something that has to cook slowly.
I think we've all had out experiences with "exploding" pressure cookers...Ours (in the UK) did the same thing, blew the gasket and it's contents everywhere!
But they're so different these days, and really a boon when it comes to watching what your eating and having the time to create good tasting, and healthy meals (as the nutrients stay in pot).
They're excellent for cooking beans (the dried sort), for fish and other dishes. Great for use if you're watching your weight and especially good if you want to make *real* stocks without the 3 to 4 hour simmering time.
They can save energy (gas/electric) and time (if you worry about time).
The Kohn PC that we have is simply a Swiss engineering beauty. The finish, the alloys in the safety release valve are simply gorgeous to look at. Plus, they're quite reasonable in price too.

Is it really "bomb proof" though?
I know the ones I see on QVC are supposed to be safe, but are they really?
I would love to try one for the health/convenience benefits but, I would have be convinced that no matter what I did, it was safe. smile
Mel,
Trust me (and I really mean it), the new PC's are far superioir to anything constructed even 5 years ago.
The Kohn that I have has 5 different safety valves built in. It is a wonderful tool, well built, has not hot spots on the bottom and is a joy to use.
It is especially good to make lovely thick vegetable soups (like my roasted parsnip soup), and know that you do not lose anything in terms of nutrition and flavour (flavor!!)...
Andrew
Where would be the best place to buy one? I hate shopping so I'm not too up on the best places!!
And eh what kind of price are we talking about?
I started to buy some really good pans (online) last year. I can only afford one at a time, but they are the heavy non-stick ones with a life time guarantee even if you use metal utensils in them. I love them, no hot spots, even heating and easy clean up!
My next thing is to replace my old falling apart and bent metal utensils. Any recomendations?
Also, that Roast Parsnip soup sounds wonderful.....are you going to share the recipe? grin

Just wanted to refresh this thread to ask for pressure cooker recipes - I just got an electronic pressure cooker and am dying to try it out. It looks like it will be easy.
Thanks in advance!
