It should really be used within 6 months from purchase, but if you have some brown sugar that has fossilised then just pop it in the microwave for 30 seconds on high and see how it is then. Repeat if necessary in 10 second bursts.

In my ceramics class, I have come across many people making decorations to stick in brown sugar. Apparently, if you put a piece of ceramic in it, it draws the moisture and stops the sugar welding together. Never tried it, but there are an awful lot of people making these things.

A crust of bread can bring it back to life lol
Simply empty the sugar into a airtight container and place a crust of bread on top the sugar stays soft.
