I need some ideas for lunches. Everyday my wife and I head home for lunch but after a year of doing this lunches are becoming very boring - soup and a sandwich gets old very quick. Everything else we eat for lunch (baked potatoes, pasta etc) also has started becoming really generic. Any suggestions on some quick great lunches?
Salmon & cous cous - takes about 10 minutes to make.
Omelette. If you want Spanish, you can cook the tatties and other bits the night before, and just lob the eggs on at the last minute.
Pasta - but make the sauce the day before.
Subway.... grin Hey, you could always skip the eating part and do what other couple's do on there lunch break eek
It's pretty boring, but I seem to have the easiest time, if I make too much tea (dinner) the night before, and put what ever's left into tupperware containers, and just take it to work next day and microwave it !!!

No thats great - we've started doing that. Some recipes in Cooking Light are kind of in two parts so you make a little extra and use the left overs the next day in a totally different lunch. There aren’t many but its fun to do.
Mr. B, lasagna is great. When I make it, I cut what's left-over into pieces, wrap it with cling film, then with aluminium foil and stick it in the freezer.
For lunch, I take it out the freezer in the morning, pull off the foil and it's usually defrosted by lunch. I nuke it with the cling wrap on to keep in the moisture.
I follow the Nicky_nak tried and approved method of cooking extra the night before wink
At home, I often nuke stuff in cling wrap but people keep coming round, wagging their finger and saying it's bad to do that. Something about carcinogens and also female hormones ???
breaded chicken fillets (about 9 bucks for a bag of 20 at Sams) -heat em, fry up some mushrooms in butter, bacon too if you want to be really unhealthy and whack it in a cob. Cod Fillet in Breadcrumbs (similar price, same place) with some Tartare sauce and salad is also yummy and slightly healthier. grin

Could you head for the park instead and take a slice of home-made quiche and some salad in a tupperware box?
Or, intersperse the soup and salad with the occasional lunch out together.
Neilh and I meet sometimes for lunch. Today we had a chinese lunch for $13.
