someone wanted a good scone recipe,here's mine
2 cups all purpose flour
2 tbs sugar(I use same amount N.Sweet)
1tbs baking power
1/2 tsp salt
1 stick unsalted butter (I have used
Marg. with good results)
1 large egg
1/4 cup whipping cream
1/2 milk
1/4 cup currants(optional)

heat oven to 400F.
mix dry ingredients in Food processor (or by hand) till it looks like cornmeal
beat egg slightly with milk and cream
with motor running pour egg mix. in a thin,
stream into flour mix just till the dough holds in a ball.fold in currants
Cut the dough in half and pat each into a 7"circle, cut each round into 6 pieces
Place on greased tray and bake app. 15 min. or until golden
good served warm with strawberries and/or jam
and cream or just with butter.Freezes well.

Mine is an old "Stork" recipe that me and Mum have used for years!

8oz SR flour
1 teaspoon baking powder
1oz sugar
2oz Stork margarine (OK, I use butter nowadays!)
1 egg, beaten
a little milk

Sift together the flour and baking powder. Rub the butter into the flour until it resembles breadcrumbs. Add the sugar and mix through. Add the egg and enough of the milk to make a soft, but not wet dough. At this stage you could add raisins, cherries, blueberries etc.

On a lightly floured board, roll out dough to 3/4" thickness and using a floured metal cutter, stamp out rounds of scone mix. Gather the scraps and roll out again. Brush with eggwash or milk and bake in a preheated oven 375f for about 12 minutes until risen and golden brown on top.

It is important you don't overwork this dough or it will become tough. You can do the first stage in the processor but add the liquid by hand. smile

Serve warm with jam and whipped cream.

looking forward to trying both of these recipes - I just tried the one out of the new Saveur magazine - irish article - but they turned out more like rock cakes!!!!!!!!!1
