Baked these for the cookie exchanges at our preschool. Don't know how they'll go down with the Americans yet, but they are a brilliant replica of the real McVities grin ...and they're easy-peasy! lol

(it's a Delia recipe roll)

Preheat oven/range/hot thing to 375°F

Lightly grease one large or two small baking trays

· 4oz self raising flour
· 1 slightly rounded teaspoon of ground ginger
· 1 teaspoon of sodium bicarbonate
· 1.5oz sugar.
· 2oz margarine or butter
· 2oz golden syrup

Sift flour, ginger and bicarb. Add sugar.
Rub in the butter until it looks like breadcrumbs.

Add syrup and mix in.

Divide the paste into 16-24, roll each piece into a ball and flatten slightly onto the baking tray. Leave plenty of room between them –they spread.

Bake for approx 10 minutes. Leave to cool for at least 10 minutes on the baking tray, before transferring to a cooling rack.

Serving suggestion dunked in a cuppa!
