I've just had a craving for some malt bread.
I used to buy it from my baker in England, but have never seen it here.
It was a small loaf, heavy for it's size and very dark in colour. It had sultanas in and was dense but moist.
Does anyone have a recipe for it?
Also, I know there are gingerbread recipes galore on the net, but do any of you have an old fashioned recipe for the loaf style, that you know for sure works? wink

I don't know if it's exactly the same, but try the canned boston brown bread. I had a hard time finding it when I lived down south, but further north most grocery stores seem to stock it, but not in the bread section, usually in the baking aisle. it's dense, with sultanas and great warm with butter.

English malt loaf recipe
1 cup water
1 cup stoned prunes
1 cup water
1 tbsp. butter
1 tbsp. malt extract
1tbspn treacle/molasses
1/4 cup golden syrup
3 cups bread flour
1 tsp. salt
1 sachet dried yeast
6 oz sultanas
Puree prunes and water together. Add all but the sultanas, mix and
knead as you would for a sweet bread. Leave to double in bulk,
covered to avoid drying out. Knock back and add sultanas.
Divide between two or three small loaf tins and leave for about 1-11/2 hours. Don't allow to rise too much, as it rises during baking.
Bake at 190c for about 25 min, or until firm. Top can be glazed later with sugar and water if wished to form a sticky top.
If using a bread machine, just tip everything in the bucket and use the rapid setting, adding sultanas when machine beeps to add extras.
The malt loaf should be firm but sticky inside. Slice and served buttered.
Now all I need now is the Malt extract.
I'm back in the UK soon, but even so it was getting harder to get it where I lived!
I believe though that the Mollie Stone stores here in the SF bay sometimes have it in their freezer section! But I think for a whooping $4.00, campared with 30p back in UK.
Oh well, back to search for malt extract.

Whoopee,just got back from Piazza's grocers in town and I so happy I could . . . . . oops time for a prozac!
I found a jar of Malt Extract made by Eden foods of Clinton Michigan . . .so keep looking things are showing up on shelves as we speak.
Off to make malt loaf now . . . . . . . :grin:

It's doubtful that I would find malt extract around here. What does the packaging look like? Now I'm craving malt loaf again!!! sad

Thanks! I had a good look at that site, and saw that I can get lots of ingredients on there that are used on my favourite TV show...Iron Chef on the Food network! Added that one to my favourites!!!
