Cheese sauce: melt a knob of butter and stir a spoonful of flour into it, maybe with a bit of dried mustard too. Add 1/2 pint of milk and slowly bring to the boil and stir as it thickens. Remove from heat and stir in sharp cheddar cheese (until it tastes right).

As an addendum to Ameriscot's recipe, place some grated cheese on top and flash under a hot grill (OK, Broiler. roll ) until golden brown and bubbling.
