Full Version: Flounder?

So I have a whole load of flounder that I bought from Costco. It's in individual (or couples) freezer bags.

What can I do with the stuff? Already did it in a pan with yellow, cherry and plum tomatoes, feta cheese, basil and baby peppers. That came out nice, if a little shrunken.

Then on Sunday I did it in tinfoil with balsamic vinegar, basil and herbs, accompanied with rice and roasted peppers.

Now I'm out of ideas. I am avoiding any type of battering/frying as supposedly on a health regime...

Come on someone, please help me find some ways to get all 16 eek of them eaten!

Well, simpy look around your local supermarket for what's fresh right now.

For example, you could skin and puree some fresh tomatoes (or use canned), de-seed, and finely chop a jalapeno, then using a small amount of olive oil, cook the puree tomatoes and jalapeno in the oil, then add a small amount of ground cumin/coriander, a small amount of salt and black pepper to taste, add roughly a cup of water and cook the sauce for about 10-15 minutes.

Finely chop some cilantro.

Meanwhile, broil a couple of either corn or flour tortillas. *Lightly* brush both sides with a small amount of olive oil before broiling. Broil them until they either puff up or get a few brown spots in places. They will crisp.

Slide in some fish and cook gently (you're essentially poaching the fish in the sauce), when the fish is finished (do not over cook), add the chopped cilantro and serve on the broiled tortillas.

Serve with a simple salad (no need for dressing as the sauce can be mopped up with letuce) or some vegetarian refried beans on the side.

I love tomatoes and was give a bagful from someone at work. Sadly they are all gone, and the ones from the farmer's market don't have the same smell and taste. As soon as I get a garden, I'm growing tomatoes.

Just a quick question- will show my ignorance no end, but I am only 23 remember....- what is cilantro? I know it's a herb, but what does it look like? What would I have eaten it in before?

You youngster! Wish I was 23 and living here.

We get cilantro a lot here. It seems to end up in Salsa and on Mexican food as a garnish. Very tasty. Looks a bit like parsley to me but tastes spicier.

Failing you managing to come up with enough recipes, just invite all your mates round for some flounder and chips smile

Hey if you don't ask you'll never know!

Cilantro, also know as coriander, or chinese parsley in the UK (although coriander here is a spice, in either whole seed form or ground as a powder) is a very fragrant herb, as Mark poited out it is a key ingredient in salsa, as well as Indian cooking and Chinese cooking and is a key ingredient in other cuisines:

If you have a BBQ grill,wrap the fish in tin foil with a little red onion,portabello mushroom,olive oil,french mustard,ground black pepper and ground sea salt.Poke holes in the top of the packets(to let the smoke flavor permeate the fish.Grill for about 8 minutes,unwrap and eat.

Aha, I know what corriander is.

No wonder I was confused, why can't the whole world just pick a name and stick with it?

Thanks for the info (and the ridicule about my age, really I'm 23 and 3 quarters!)

Will try MacZ'z recipe and Captmars in the oven seeing as how I have no garden/balcony and no BBQ.
