Never thought of trying this until I saw a recipe in my egg cookbook (they called it eggs and sausage). I'm guessing all I need is hard boiled eggs, sausage meat (Jimmy Dean's sage?), beaten egg and breadcrumbs? I also have some spice that apparently goes well with sausage - can't remember what it's called though (I bought a loaded spice rack a week or so ago).
Sage is pretty much *the* spice in sausage meat.
Actually, there's a really good Italian recipe called polpettone (I think), whereby a meatloaf recipe (made with ground veal/beef/pork has hard boiled eggs through the middle), not unlike the scotch egg recipe.

Well I was pretty much going to try and eye-ball it (is that a Yank expression?). Simply hard boiling and shelling the eggs, wrapping them in sausage meat, dipping in beaten egg and bread-crumbs then deep frying them.
If you have a top-notch recipe then I would love to hear it.
PS - I did the fish again last week, made the batter thicker and it was delicious.

DON'T deep fry them!!! The eggs are covered with the sausage mixture (also you can add a small amount of the bread crumbs to help bind) roll in bread crumbs and bake in an oven!!!
What temperature? How long for?

You can do them in the oven, but as oven vary so much (I feel) that it can make them somewhat tough and they just don't cook fast enough. If you're going to do them in the oven a temperature of somewhere between 375 and 400 would probably work.
Anways, here's a little recipe for the way I've done them
6 well chilled , peeled, hard boiled eggs
1 pound Jimmy Dean (or similar) breakfast sausage
1/2 cup all purpose flour
freshly ground black pepper
1/2 tspn paprika (or to taste)
2 large eggs, beaten
3/4 cup seasoned bread crumbs, either your own (or store bought - progresso?)
Enough vegetable oil for deep frying
In a large, deep heavy pot heat vegetable oil to 350 degrees (no more than 2/3rds full or use a deep fryer - preferred).

On a large deep plate (or pie plate), combine the freshly ground pepper, paprika and flour. Place the beaten eggs into another shallow dish. The breadcrumbs onto a plate,
Divide breakfast sausage into 6.
Roll each egg in the seasoned flour and using moistened hands press a portion of the sausage around each egg. Pinch gently to seal.
Carefully dip the sausage wrapped eggs into beaten eggs then roll in the seasoned bread crumbs.
Gently cook the eggs in the preaheated oil (a couple at a time - add too many at once and the temperature of the oil will drop and make them soggy = BAD) for approximately 4-5 minutes or until sausage is cooked and the the crust is golden brown. Repeat until they're all cooked.
Drain on a cake rack over paper towels.
Serve warm.

Geez - you can tell I'm getting experimental in the kitchen when I already have everything in your recipe. I will boil and chill some eggs tonight and try the recipe tomorrow.
