I have a Breadman Ultimate machine that I've had for about 3 years now.
I struggled in the beginning to find a good recipe, and found a light airy loaf that I could only make a 1 1/2 lb size cos it burst out the top of the machine.
Now, like me, the dough looks sad and heavy.
I'm using all the same ingredients and have added gluten to the flour, which was what gave the good results.
Anybody else had this?
Got a failsafe bread recipe?

Unfortunately because of construction in my kitchen I haven't been able to use my bread machine in a long time.
I would suggest first of all make sure that all your ingredients are fresh. I found that even dried yeast can give poor results if it's been around a while.
I found a book on sale at Barnes and Noble that has some great recipes including teacakes, which I haven't had in years. It's called 'Bread Machine how to prepare and bake the perfect loaf by Jennie Shapter. It was only $5.99. I can't wait to try out some of the redipes next week when my kitchen will be finally at a stage where I can use it normally.
I will confess to using the little mixes (quite cheap if you get them from Costco or Sam's Club). I too had the trouble of them rising out the top of the machine, but solved this by using slightly less water (about a tablespoon or two less made all the difference).
All my recipes are for making it by hand (I prefer this over machines)..
I do have a couple, if you'd like them, I'll dig 'em up.
One thought, are you using "instant" yeast?

Andrew, I use Fleischmans yeast in a jar and keep it in the fridge.
I tied again with a wholemeal flour too, and that was worse. I do add a tablespoon of gluten as well.
Have you tried Delia's just water recipe?

I think there's one in the town dedicated to the patron saint of wrestling, San Bruno...
They sell this German Instant Yeast called Oetker, it's very very good...

By the look of my malt loaf,9 see Melhug Malt Loaf thread) it was my yeast that was at fault.
Although it's still in date till end October!
So I'll try again
Bread machines are not good for baking,make your dough on that setting and then transfer the dough to baking pans,allow to rise and then bake in the oven.By doing it this way I can make french loaves,rolls and regular sandwich style bread,you will be surprised how proffesional they turn out.Another wonderfull addition is sour dough mix,you can find this in the health food store and once you have it ready you can make great crusty bread.
