Debsowerby,you had mentioned making some Parmeson and onion Foccaccia bread "do share the resipe with us please"
OK, Julie. Here it is!

Using basic white bread recipe at the end of the first rise stage......

Cut off enough dough to fit in whatever size tin you are using. I use a cookie tray to do mine in, but you can use a pizza tray or similar - as long as it's metal and not glass.

Push the dough into the corners of the tin, keeping the thickness fairly even. Be patient here, it may seem like it's not going to fit but it will! Then cover with a piece of cling film and leave for 15-20 minutes to rise again.

When risen, poke indents into the dough with your fingers, then spread some sliced red onion and grated parmesan evenly over the surface. Drizzle a fair quantity of good olive oil over the top of this - not too much or it will fry and you don't want that! You can flavour the oil with chopped garlic and herbs to taste - I used rosemary, basil and oregano (all dried). Add a pinch of salt to taste.

Place in the centre of a 350degree oven and bake for about 20 minutes. Remove, cool slightly and serve warm!
