10 Tablespoons All Purpose flour
1 Tablespoon Self Raising flour
1 Teaspoon Curry Powder
1 Teaspoon Garlic Powder
1 Teaspoon Chili Powder
1 Teaspoon Baking Powder
1/2 Teaspoon Salt
2 Teaspoons Turmeric Powder
2 eggs
2 large onions quartered and sliced
1/2 lb Spinach v. finely chopped (I leave this out!)
1/2 Pint Cold Water

Mix all well together.
Deep fry in hot oil (I use my wok for frying), dropping no more than 4 separate spoonfuls of the mixture in one batch. (Any more and this will cause the temp. of the oil to lower and not fry as well.
Drain and keep warm.

This makes quite a large amount of bhajis but they will freeze very well!

Deb, what made you put this recipe on today. i just made them and they are the best I have ever tasted! Thank you. lol
There was a request for onion bhajis a little while ago, but it took me a bit of time to locate my recipe. (Normally I commit them to memory but I haven't made them in a while)

Glad you liked them.....did you put the spinach in or not?

Yes i did put fresh spinach in and loved it, however they did not keep well. the next day, the taste was good, but they had gone soft. i am thinking this was the moisture from the spinach. Does that happen to you without the spinach? How do you reheat them? Anyway, my son was home from school for a few hours and devoured the lot..soft or not.
Mine went a bit soft too even without the spinach, but I reheated them in the oven and they were fine. Still not crunchy like on the first fry. I suppose you could fry them again, briefly in hot oil and they'd be OK then!

Debs, this is a stupid question, but what oil should I use, as I've never fried anything as of yet?

I just use the store's own brand vegetable oil, or you can use Canola oil.

You can re-use oil 10 - 15 times before throwing it out. I keep an old oil bottle and put it in there then in the bin. We have a septic system and I don't want to do something I shouldn't!!
