we made some for a bonfire do and it was so nice, thought the recipe might still be useful for thanksgiving or something. (for the southeners among you, parkin is a treacle based cake eaten on bonfire night.)
mix together
100g SR flour
100g medium oatmeal
100g soft brown sugar
1 tsp ground ginger
warm in pan
100g black treacle
50g butter
75ml milk
add dry ingredients and 1 beaten egg to pan and beat well. pour into 7 inch square tin and bake at 325 for 50-55 mins
