I’ve been doing research in local school and I want to shag the knickers off this hot young teacher. So, in order to get in her good books and have an excuse to chat with said bird, I signed up for their Friday lunch sharing thing and volunteered to make soup.
Now, I need a fool-proof and tasty recipe that you use, have used and really like. She didn’t say anything about being a veggie-head so anything that works would be most appreciated. I could open twenty cans of Chunky Soup but that would get a bit pricey and I might get found out.

Soup is one of the easiest things to throw together and not have to worry about the ingredients.
One that works really well here is French Onion soup. Just get a huge amount of large white or yellow onions. Peel them, chop both ends off and then cut them in half to get half ring slices. Slice thinly. then put some olive oil or butter in the bottom of a large pan and on low heat cook the onions. This will take a while because you want them to break down and turn slightly brown. But not crispy. Just keep stirring occasionally until they reduce down (the pile should shrink down to about a quarter of the size it was when you started).
then just get some beef broth. You can do this either using knorr stock cubes and add water, or buy the tins/boxes of beef broth. Depending on how many onions you use will depend on how much broth you need to add.
When serving, you can top it with a cheese coated piece of french stick - a cheese like provolone, swiss, or gruyer is good for this. You can toast these before you go and just top each bowl of soup with a slice.
Another good soup is minestrone. Just lightly cook a large onion (chopped small) in the bottom of a large pan in a little butter, then slowly add whichever veggies you like - celery, carrots, green beans, different colored peppers. If you leave the lid on in-between adding each veggie and stirring, the veggies will slightly steam which helps bring out the flavors. Then add a tin of chopped tomatoes, a can of beans (some type of white bean like chick peas or just white beans), corn (tinned or frozen), and at least a pint of chicken or veggie stock. Let this cook for about 20 minutes. then add some small pasta. don't add too much. they swell up a lot and you don't want too many added to the pot. Cook for another further 20 minutes. You may need to add more stock at this stage if you don't have enough for the pasta. If you want to add meat you can get a cooked chicken and break it up and put it in the pot, or a german sausage, sliced small.
