As a child, there was nothing more revolting than leftovers. Especially cold ones. And yet yesterday, I found myself scarfing with glee two of the remaining roast spuds from dinner the night before. Cold. They were yummy. But I've never stooped that low before. Is it a sign of age? Or just parenthood?

Since I got to be a "mom" of three "kids" with sporting activities every night, i have really come to appreciate "fast foods" -meatballs and spag -10 minutes, rice and chicken -15 minutes. leftovers, 2 minutes on high..... 0 minutes for the cold-food-guzzlers. i now deliberately cook extra of everything. (Unfortunately the gannets seem to manage to eat it anyway...)

I always liked leftovers, especially when made into something like bubble and squeak. I make it for my kids and they love it. sometimes it ends up being just fried potatoes.

I have found that doing a mass of things like chili and rice or chicken I can use the leftovers for so many other things (after the kids have finished polishing off the bits they want) that make another complete meal. Saves a huge amount of time )

Rachael Ray and 30 minute meals are nothing on a busy mother of 3 ;)
Hubby's favorite is week pie. His mam used to make it. Every scrap of meat was placed in a pastry shell and odd vegie and beans and gravy were added and a crust placed on top. I have to admit, until I made one I thought it would be inedible. Turns out it's really good.
