Yeah, it had citric acid in it, but the two chippies I worked at didn't use the moisture-draining stuff. The chips soaked in water all day, were drained for about 5 minutes before frying -the heat was cranked right up before we threw the chips in. The chinese takeaway that took over the one chippy used the everdry stuff (is that the name? not sure) and their chips were way to crispy with a funny taste. They didn't get their fat so hot, though.

Yeah, used to go to a F & C shop after school run by a Turkish or Greek man. He'd give the batter bits for free, and say "ahh, you bloody kids, always taking me the piss."


Oh, and ditto on the point with the flag in the fish and chips. They do that with everything British. A crap food but if they have an old phone box in the bar they think its authentic. I used to laugh though as the one in Eugene still had the smell of stale piss.

The fish and chips here in Vancouver are dire, though they get the hump when you tell them that.

Zip you'll be surprised how popular seafood is in the Great Lakes region. Those 70 mile across and 300 mile long puddles are not fish free. Lake perch is a big thing here.

Comes with free heavy metal poisoning. Lake fish is awful. Truly. Toxin-wise and taste-wise. Those who love it just haven't travelled far enough to taste fresh ocean fish. There's no going back.

Point taken about the lake perch, but if that junk is so popular, imagine what the real deal would do?
