SHIRRED EGGS

Cover the bottoms of individual dishes with a little butter and a few fresh bread crumbs; drop into each dish two fresh eggs; stand this dish in a pan of hot water and cook in the oven until the whites are "set." Put a tiny bit of butter in the middle of each, and a dusting of salt and pepper.
Aha, now that's what I call coddled eggs, this language thing is a real pain, confusion is a state I now not only recognise, I live in. lol
Very similar, I have some egg coddlers, they are cylindrical, height greater than the diameter, and they have lids. When I've had shirred eggs, they have been cooked in a gratinee dish or in ramekins.

My wife liked the coddled eggs but I couldn't get the yolk the way I like it, so I stick to methods where I have more control.
We'll sometimes place proscuitto in the bottom (we use large ramekins to do ours when we have them..)

I lost my coddlers in my divorce, they were bought for us by 'his' parents, and well, I won't go into that now in the recipe thread. roll

But I must say I do miss them cry

Sounds nasty... but then again I've not been able to eat eggs since getting stomach flu in January while on a egg (mac) muffin craze.
