I use this Delia Smith one when I have lots of green tomatoes
2 1/2 IBS GREEN TOMATOES
2IBS ONIONS
2 1/2 IB COOKING APPLES
1 IB RAISINS
6 CLOVES GARLIC, CRUSHED
1/2 TBLSP CAYENNE PEPPER
1/2 TBLSP SALT
2 LEVEL DESSERT SPOONS GROUND GINGER
1 IB 6OZ SOFT BROWN SUGAR
1OZ PICKLING SPICE
2 PINTS MALT VINEGER
Pretty much mince everything,(food process) hang the spice in the pan in a gauze bag, add the vinager and bring to simmer.Let simmer gently for 3 1/2 hours.Stir now and then. Pour the hot chutney into jars (8-1 IB ) Add one of those wax paper disc thingys and a tight lid.Leave for about 3 months to mellow, if you can last that long, ours has usually gone by then!!!
