So, do you still celebrate Pancake Day? I am going to have them for dinner instead of a real dinner. What's your favourite topping? Mine is still sugar and lemon.
So any pancake recipes that do not involve Bisquick or that type of muck will be welcome.
It's all just eggs flour and milk isn't it? Just the quantities into US cups would be appreciated.
I had some for breakfast - sugar and lemon too.
Do you know, not one person I work with knew what the connection was between the words "mardi gras" and "fat tuesday." Weird huh?
In terms of a non-bisquick recipe, we usually use the pancake recipe from epicurious.com for pancake day. It can be located here http//www.epicurious.com/recipes/recipe_views/views/1933
Here is the recipe copied and pasted in
4 large eggs
1 cup milk (do not use low-fat or nonfat)
1 tablespoon butter, melted
1 tablespoon sugar
1 teaspoon vanilla, extract
1/2 teaspoon salt
1 cup all purpose flour
Additional melted butter
Powdered sugar
Fresh lemon juice
Preheat oven to 350°F. Blend first 6 ingredients in blender. Gradually add flour; blend until smooth. Let stand 15 minutes.
Heat medium nonstick skillet over medium-high heat. Brush with butter. Add 2 generous tablespoons batter, tilting pan to coat bottom. Cook until golden on bottom, about 45 seconds. Turn pancake over. Cook until bottom is speckled with brown, about 30 seconds. Turn out onto paper towel. Cover with another paper towel. Repeat with remaining batter, brushing skillet with butter as needed.
Butter ovenproof dish. Sift powdered sugar over speckled side of each pancake, then sprinkle lightly with lemon juice; fold pancakes into quarters. Overlap pancakes in prepared dish. Cover; bake until heated through, about 10 minutes. Serve with more powdered sugar and lemon juice.
Makes about 18.

Miserable barsteward !!! My 'murrican wife actually reminded me today. We are flying to the UK tomorrow for 2 weeks so my mind has been on other things, but tonight we are having pancakes. She's a good girl my missus.

The first three were filled with tuna, cheese and granny smith apple, the last 4 were orange, lemon and sugar.

Yes! We have had our pancakes today with sugar and fresh squeezed lemon juice, and very jolly nice they were too!
Di, I use 1 large egg to 4oz AP flour then add enough milk and water while whisking briskly to make the batter the consistency of light cream. I don't really think there is a hard and fast rule about the batter as long as the consistency is right or you will either end up with a frisbee or an outright bloody mess! Anyway, I use a smearing of lard on an old frying pan over medium to high heat (keep adjusting the heat) every now and again and swirl in half a ladleful or enough to coat the bottom of the pan. If you've overdone the amount then just tip it back into the bowl. Let it cook until brown and then flip over and do the other side until it's cooked. Should only take a minute or so.
This way, you can even have a savoury filling....should you wish......I wouldn't but then that's just me. I think there is something fundamentally wrong with having a savoury filling to your pancake, unless they are Findus Crispy Pancakes that is.......... grin

I just have never bothered with semi-quasi religious festivals and find them totally uninteresting, even when in the past I have on occasion made crepes for other uses.
It never occurs to me that it is "pancake day" anyways, having left all that behind. To me, it's just Tuesday (and a good one at that...)
Speaking of the UK, I'm going back for my 3rd trip in 16 years possibly in a few months for the British GP at Donington, but that's for a different thread...

They have been talking about national pancake day on the radio all day and apparently IHOP were giving away free pancakes this morning!
anyway, yes we have had pancakes for dinner with the sugar and freshly squeezed lemon juice. Lovely grin
we all love them and the kids get such a blast out of having them, knowing this is the way we did it back home )
