Another of our Thanksgiving/Christmas tradition is home made lemon curd.
I searched this forum and didn't find a previous post on this but in case I missed one, I'll apologise now. lol
4 Lemons
4 Large Eggs
1 lb Sugar
¼ lb Butter
Finely grate the rind of the lemons, just the yellow surface, not the white pith. Juice the lemons and strain the juice.
Put the grated rind, the strained juice, the sugar, the beaten eggs and the butter into a double boiler over simmering water, and stir until it thickens to coat the spoon.
put in sterilised jars and cap with sterilised caps.
I have my nana's recipe for lemon cheese.... somewhere -haven't found it since we moved here but live in hope of it being in one of the untouched boxes. Love that stuff.
It was pretty similar, but the yolks and whites are added seperately. And you cap it with greaseproof paper and cloth ;) We always used to make it in summer, though, and put it on scones, fresh bread or inside a lemon sponge cake.
Made a coffee cake with walnuts on it today. A real coffee cake -coffee flavored -you don't seem to get those over here ??? My American visitor liked it and wondered why they'd never had one before. Nana made lots of coffee cakes. And lemon cheese. And potted meat( ??? ). And seriouslt good hotpots. and and and.....

I've not had lemon curd in ...well, yonks. I used to eat lemon curd butties all the time when I was a Lil Rude - white bread with lurpak butter and tons of lemon curd. My mum used to make lemon curd tarts too... now I'm jonesing.
Perhaps I can persuade Mrs Rude to make me some of this.

Can I have the recipe please, sans the walnuts? I have looked all over for a coffee cake recipe to no avail.
They dont sell coffee essence over here either (I havent found any anyways) Coffee cake always seems to taste better with pretend coffee in it IMO :)
Well I just made a basic sponge -same weight of all ingredients, then used instant coffee (a couple of spoonfuls made v. strong) to flavour it.
The walnuts were put on top (I filled in and topped it with coffee buttercream) so beest could pick them off! lol
does that help? Or do you need a sponge recipe? if so, later as I have to dash out to my figure skating class now....
Sponge cake recipe too please if you dont mind ) I have attempted this with various spomge cake recipes before but it just hasnt come out right..........

Well, Mrs Rude made lemon curd yesterday using Londonsquare's recipe.
I ate so much I was damn near sick. Top recipe, yo.
Can you put lemon curd in the freezer? Or should I just keep it in a jam jar until time for use? Cause I got tons left.
Jam jar in the fridge for a short while. It really won't hang around that long -it's very moreish.
Buy yourself a wonderloaf and get stuck in, or send me some, I love the stuff. smile
Get some good pound cake and cut horizontally in thin layers, spread with curd and reassemble. Cut vertical slices and serve with dollops of whipped cream.
The curd is only supposed to last a few weeks, but I found some in the back of the fridge from last Christmas. I tried it and it was still good, but the fresh was better.
An English place around here, served warm gingerbread smothered in warm lemon curd, it is a great combo.
