Your standard kebab has only lamb meat in it, but there are herbs and spices added. Cheaper versions mayhave a little soy or similar filler added, but in a good chippy it will be just lamb and seasoning. It's very fatty lamb, though. :(
Thanks for that info! Dont suppose you have any idea EXACTLY what spices etc they put on it do you? Cos I made friends with the guy who owns a Gyro Shop down the road and he told me he wants to make some like how Britian does and I told him I have some very good friends like Monster who will know exactly how to make it! :wink:

Well, I can pull 4 or 5 books I have at home that describe how to make the meat for this...
Go to a library and look for anything under Middle Eastern/Mediterranean food
Thus, that means the books and information exist out there.
You just have to work a bit harder.

Thanks for the info! The trouble is those books will have the Middle Eastern Recipes which isnt what the British Donner Kebab Shops use. They have developed and adaped it to a certain taste in the UK and its not something you will find in an American Libary sadly.
Then I guess you have exhausted all possibilites of recreating this delicacy.
Two choices left.
Trip back to the UK and eat one
Attempt a Lamb Recipe from any off the web, and just adapt it to your needs.
This recipe below looks like it has most of the flavours
Lamb Kebabs with Herbed Yoghurt Dip
Chef Deborah Pitter
You need
Lamb Kebabs
750g minced, lean lamb
2 cloves garlic, crushed
1 tspn cinnamon
2 tspns paprika
2 tspns ground cumin
2 tblspns fresh mint
1 tbspn tomato puree
1 tspn sweet chilli sauce
Herbed Yoghurt Dip
500g thick natural yoghurt
3 cloves garlic, crushed
3 tblspns chopped fresh mint
2 tblspns chopped fresh chives
Method
Combine all kebab ingredients and shape into kebabs around one end of the skewer. Grill or BBQ
Serving Suggestion Combine all dip ingredients. Serve kebabs hot with dip.
Thanks for that. I think my only option is to know someone who works in a Kebab Shop in the U.K and ask them exactly how it is made or if anyone knows anyone who does. That seems to be my only option. But thanks for everyones help anyways!

The books I have are British (Middle Eastern) cookbooks...Thus flavors tend to be harmonised for a British palate..
Look for anything by Claudia Roden.
If you're going to use ground lamb, you will have to double grind the lamb until it is almost a puree and then squeeze in either muslin/cheescloth or a clean tea towel.
Alternatively, another method (ala Middle Eastern) is to slice very thinly very lean lamb, marinade, then stack onto a three pronged skewer (as one would use on a rotisserie and compress. Then cook and slice vertically from top to bottom.

Just as with any commercially marketed recipe, they are not going to share. But if I wanted to know the basic ingredients, I might formulate a question for them regarding food allergy information. E.g. are any nuts or dairy products used in the manufacturing plant, are any to be found in the kebabs, would cross contamination be possible. Are any spices used that are derived from any types of pepper or chilli, are any raw herbs used....... see where I'm going?
Ahhh ha!!! now theres a good idea to work on...So basically the Kebab Shop Owners dont do ANYTHING to the meat at all!! its the Manufactureres who do all that spicing etc!!!!
