Anyone ever cooked a turkey breast for Thanksgiving. As most of our single friends have married and are now off to family gatherings the Thursday will just be me and him and I was thinking of cooking just a turkey breast.
Oh and Monster i did search, this is what I got, Macs just don't like the search

You can just roast it like you would a regular turkey. Might need more bacon (or your fat of choice) than usual, to stop it getting too dry.
Well done, you may have a turkey-coloured star.

Or you could slice right into it and stuff it with interesting things like mushroom, bacon, sage and onion stuffing etc, then roast it like Jim says.

I would make up a garlic, herb and lemon butter and shove it under the skin, cover it in some nice smoky bacon and sit it on a bed of root veggies. Start it off in a 450f oven for 15 minutes then reduce the heat to about 350f and continue roasting it for 10 minutes per pound. If you like crispy skin then take the bacon off for the last 20 mins of cooking time. Don't forget that it will continue to cook after you take it out of the oven to let it rest so factor this into the timing.

My hubby and I started just getting the breast when the kids decided they didn't like turkey any more.
It was much easier and less messy to deal with the leftovers.
Thanks guys, this will be another first, annoying cos I'd just learnt how to do the whole shabang without blinking. Still, i get to go out Friday and Saturday so the new brides can try out their cooking on me. grin
