I made this today and thought I'd share! smile
Hot Milk Sponge Cake with Broiled Coconut Topping
2 Eggs
I cup AP flour sifted with 1 teaspoon baking powder
1 cup sugar
2 oz butter
1/2 cup milk
Beat eggs and sugar together until light and fluffy and leaving a trail.
Heat milk in microwave. Add butter and stir until melted.
Add flour, baking powder and milk/butter and mix well.
Pour into a greased baking pan 9" x 9"
Bake at 350f for 25 - 30 mins.
Topping
2 Tablespoons butter
1/4 cup packed brown sugar
1 Tablespoon milk
1/2 cup coconut
Mix all together and spread on top of warm cake. Place under broiler for 3 - 4 minutes until bubbling. Watch carefully as this can burn! Make sure the oven rack is low.
The texture of this cake is so light and fluffy, and if you like coconut you'll LOVE this!!
