I've tried this one,
http//bread.allrecipes.com/az/PeppyPitaBread.asp
but it's too fluffy, more like a muffin.
Anyone got a recipe for the dough, using the machine, which actually comes out flat like the store bought ones?
Try leaving the yeast out.
Ben, that would leave me with a tortilla. What i want is a pocket bread. Pita bread is leavened but obviously not as much as Pepy thinks.
had a lesson a few years back on making tortillas by an old Mexican lady. Handful of flour, pinch of salt, ( so it will brown a little) a little fat if you have it, and water until it's a pliable dough then slapping it out on flat hands and cooking on an electric ring. It was great. Her little English and my little Spanish, we got by great. grin
well, I saw a program on the TV the other day which seemed to use pizza dough and they put it in a frying pan with an extremely small amount of oil. What came out looked like pita bread. Could be worth a try ??? Or just reduce the amount of yeast you put in.

Sorry, not being much help am I.
No problem Ben, am gonna try less yeast. It's just such a long drive to the International store and they do all crust pitas which are soft and contain no corn syrup and last a very short time in our house. Let you know how it goes. smile

That's the beauty of the International Bazaar. They do frozen slices of donor kebab meat. Those I can keep in the freezer. It's the bread I'm stuck for.
