We have an Irish Pub and I make the stew for St. Pat's day. It's not authentic though because the real thing calls for mutton or lamb but I substitute an even mix of beef and pork. Americans' don't like mutton or lamb very much and it's expensive over here. Make it like a regular stew but put everything that grows under the ground in it - potatoes, onions, carrots, turnips, swedes, parsnips, etc. Season it well with salt and pepper (thyme and parsley also if you like) and serve with cabbage.
