Ok, this is for the 'older' ones grin LOL

My mum used to make the BEST stew! Couple of tins of cornbeef, 5lb spuds an onion and ....????????

I have been craving my mum's stew for the past 2 years, the other day I tried making it...

...NOT good, tasted just like watery spuds with lumps of cornbeef,had NO taste to it at all- my hubby was horrified!!!!

Anyone know how to make this??

Also, I tried using a couple of beef bullian cubes (sp?) instead of Oxo....

Where did I mess up???

My recipe is pretty vague, but here goes. I peel and quarter potatoes..leave peel on if new. I sautee them in a little olive oil or butter and add some onions. Set aside 1/3rd of these for topping. Add can of corned beef(chopped into 1/2 pieces) and sautee for 2 minutes. Add 1 can of baked beans. Put into a baking pan and top with reserved potatoes. Bake for 15 minutes. Great!
I would call that more of a corned beef hash than a stew. My beef stew is done in the crock-pot and is scrummy!
Place everything in crock-pot in the order given

3 carrots, cut up
3 potatoes, cut up
2lbs beef chuck in 1 1/2" cubes
1 cup beef stock made from Oxo cube or Knorr buillon cube
1 teaspn. Worcestershire sauce
1 clove garlic
1 bay leaf
salt to taste
1/2 teaspn. pepper
1 teaspn. paprika
3 onions, quartered
1 stalk celery with tops, cut up

(I put a few mushrooms in too for added bonus!)

Cook on high for 4 - 5 hrs, or low for 10 - 12 hrs

I usually thicken the gravy slightly with a cornflour/water slurry.

This stew is the best I have ever made!
