Ok, I know this is school-level stuff, but how do I make scones (with raisins) - everyone keeps asking me if they are like biscuits so maybe I should make some so they can taste them for themselves.

The easier the better please, I don't mind cheating.
Okay, I guess I have way too much time on my hands at work...

You will need

10oz plain flour (all purpose)
4 level teaspoons of baking powder
pinch of sea salt
2 teaspoons of caster sugar (superfine sugar here)
3oz diced and chilled unsalted butter
iced water mixed with plain yoghurt (about a glassful)
one egg beaten with a little milk for glaze.

Preheat oven to 350 degrees F

Sift the dry ingredients together in a bowl and rub in the butter using your fingertips.

(The trick to making good scones is to handle the mix as little as possible, thus allowing the mixture to remain as cool as possible - use the fingertips).

Gently, using a broad knife, stir in just enough of the yoghurt/water mix to bring it all together (don't worry if you can still
see lumps of butter, it'll all come together).

Turn out onto a lightly floured surface (not too much flour as this can "toughen" the dough and you do not want to add anymore to the mix).

Gently fold and knead the mix, just enough until it is holding it's own and then bring together and pat out until it is roughly rectangular in shape and approx an inch or so thick.

Using a 3 inch (or thereabouts) dough cutter disc, cut out the scones from the dough and place on a non stick cookie sheet. (any remaining dough can be brought together gently and additonal scones can be cut).

Brush each scone with with the glaze and bake for approx 15 minutes or so until well risen and golden brown.

Remove from the oven and allow to cool on a rack.
