Hot Cross Buns
Ingredients
1/2 cup milk
1/2 oz. active yeast (2 envelopes)
1 teaspoon sugar
2 -1/4 cups flour
1/2 teaspoon salt
1 tbls. brown sugar
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon cloves
1/4 teaspoon ginger
1 oz. softened butter
1 egg
1/2 cup currants
GLAZE
2 tablespoons milk
2 tablespoons sugar
Warm the milk gently until lukewarm and mix it with the yeast and sugar.
Place the flour in a large bowl and add the salt, brown sugar and
spices. Make a well in the center and add the yeast mixtures, softened
butter, egg and the remaining milk so that it makes a firm dough. Add
the currants. Knead the mixture until the dough takes on a rubbery
texture. Cover the bowl and let it stand for 2 hours in a warm place so
that the dough doubles its volume.
Punch the dough down, shape into buns and put them on a 2 well greased
baking trays. Allow to rise until double their size, approximately 1/2
hour, then make a cross in each bun with a knife.
Bake at 400 degrees for 15 to 20 minutes.
Just before the buns are ready to come out, boil the milk and sugar in a
small saucepan until the mixture bubbles and forms a glaze.
Remove the buns from the oven and brush them while they are still hot
with two coatings of glaze.
