Not an English thing, but something I found is pretty tasty
About 2oz of pork, chicken or beef chopped into fine cubes. You can use leftovers here.
Put the meat in a pan with some garlic and seasoning such as fajita or whatever you like.
Chop up 5-6 jalapenos and bung them in with the meat and fry it all together. No oil is needed.
Get a 98% fat free burrio sized tortilla and lightly wet both sides. Pop it on a plate.
But about 1/4 cup of fat free (or low fat) spicy refried beans on the tortilla, put the cooked meat on then sprinkle with 2% or fat free cheese. Put the whole lot in the microwave until the cheese melts. Make sure the beans are cooked.
Throw on a bit of fat free sour cream and some salsa to taste, Role up and eat.
As I said, not an English thing, but damn tasty for a evening snack.
Regards
Nigel
